  • 8 oz elbow macaroni (about 2 cups uncooked)
  • 2½ cups milk (whole milk works best)
  • 1½ cups chicken broth
  • 3 cloves garlic, minced
  • 1 teaspoon kosher salt
  • ¾ teaspoon freshly ground black pepper
  • 1 teaspoon Italian seasoning
  • A pinch of red pepper flakes (optional, for a touch of heat)
  • 3 cups cooked chicken, diced (about 1416 oz, rotisserie chicken works great!)
  • 3 cups fresh broccoli florets (about 10 oz, cut into bite-sized pieces)
  • 6 oz white cheddar cheese, freshly grated (about 2½ cups)
  • Grated parmesan cheese for topping (as much as you like!)

Instructions

  1. Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
  2. In a large pot, combine the milk, chicken broth, minced garlic, salt, pepper, Italian seasoning, and red pepper flakes. Heat over medium heat until warm.
  3. Add the cooked macaroni, diced chicken, and broccoli florets to the pot. Stir to combine.
  4. Gradually add the grated white cheddar cheese, stirring until melted and creamy.
  5. Serve hot, topped with grated parmesan cheese as desired.

Notes

  • For a spicier version, increase the amount of red pepper flakes.
  • Rotisserie chicken saves time and adds flavor.
  • Feel free to substitute other vegetables if desired.
