4 medium zucchinis
1 lb ground turkey or beef
1 cup diced tomatoes
1 cup black beans, drained and rinsed
1 cup corn
1 tsp chili powder
1 tsp cumin
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and pepper to taste
1 cup shredded cheese (optional)
Fresh cilantro for garnish
Instructions
Preheat the oven to 375°F (190°C).
Slice the zucchinis in half lengthwise and scoop out the center to create boats.
In a skillet, cook the ground turkey or beef over medium heat until browned.
Add diced tomatoes, black beans, corn, chili powder, cumin, garlic powder, onion powder, salt, and pepper to the skillet. Stir to combine and cook for 5-7 minutes.
Fill each zucchini boat with the meat mixture and place them in a baking dish.
If using, sprinkle shredded cheese on top of the filled zucchini boats.
Bake in the preheated oven for 20-25 minutes until the zucchinis are tender.
Garnish with fresh cilantro before serving.
