Slice the zucchini lengthwise into thin strips and sprinkle with kosher salt. Let it sit for 10 minutes to draw out moisture.
In a large skillet, heat olive oil over medium heat. Add sliced mushrooms and garlic, cooking until mushrooms are tender.
Stir in black pepper and spinach, cooking until spinach is wilted. Remove from heat.
In a bowl, combine cottage cheese, parsley, basil, and beaten eggs. Mix well.
Spread a layer of marinara sauce on the bottom of a baking dish.
Layer zucchini strips, cottage cheese mixture, mushroom-spinach mixture, and mozzarella cheese. Repeat layers until all ingredients are used, finishing with marinara sauce and mozzarella on top.
Bake in the preheated oven for 45 minutes, or until the cheese is bubbly and golden.
Let it cool for 10 minutes before slicing and serving.

For a firmer texture, you can grill or roast the zucchini slices before layering.
