Ingredients

  • 1 medium spaghetti squash
  • 2 cups fresh spinach
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Drizzle olive oil on the cut sides and season with salt and pepper.
  4. Place the squash cut side down on a baking sheet and roast for 30-40 minutes until tender.
  5. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
  6. Add spinach and cook until wilted, then remove from heat.
  7. In a bowl, mix ricotta cheese, half of the mozzarella, and half of the Parmesan with the sautéed spinach.
  8. Once the squash is cooked, use a fork to scrape the flesh into strands and mix with the cheese and spinach mixture.
  9. Stuff the mixture back into the squash halves and top with remaining mozzarella and Parmesan.
  10. Return to the oven and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
