  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup ube puree
  • 1 teaspoon vanilla bean paste
  • 3 large eggs
  • 1 cup sour cream
  • ¼ cup all-purpose flour

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined.
  3. Press the mixture into the bottom of a springform pan to form the crust.
  4. In a large mixing bowl, beat the cream cheese and sugar until smooth.
  5. Add the ube puree and vanilla bean paste, mixing until well combined.
  6. Incorporate the eggs one at a time, mixing well after each addition.
  7. Add the sour cream and flour, mixing until just combined.
  8. Pour the cheesecake batter over the crust in the springform pan.
  9. Bake for 50-60 minutes or until the center is set but still slightly jiggly.
  10. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
  11. Refrigerate for at least 4 hours or overnight before serving.

  • For best results, use fresh ube puree.
  • Allow the cheesecake to come to room temperature before serving for better flavor.
