1 lb boneless, skinless chicken breasts
4 cups chicken broth
1 can (14.5 oz) diced tomatoes
1 cup carrots, diced
1 cup celery, diced
1 cup onion, diced
2 cloves garlic, minced
1 tsp dried basil
1 tsp dried oregano
Salt and pepper to taste
2 cups kale, chopped
1 cup heavy cream
Instructions
In a large pot, heat a little oil over medium heat and add the diced onion, carrots, and celery. Sauté until softened.
Add the minced garlic and cook for another minute.
Stir in the chicken broth, diced tomatoes, basil, oregano, salt, and pepper.
Add the chicken breasts to the pot and bring to a boil. Reduce heat and simmer until the chicken is cooked through.
Remove the chicken, shred it, and return it to the pot.
Add the chopped kale and heavy cream, stirring until the kale is wilted and the soup is heated through.
Adjust seasoning if necessary and serve hot.
Notes
This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
For a lighter version, substitute heavy cream with coconut milk.
