  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup whole milk
  • 1 cup crushed pineapple, drained
  • 1/2 cup pineapple juice
  • 1/2 cup sweetened condensed milk (for glaze)
  • 1/2 cup pineapple chunks (for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a cake pan.
  2. Cream butter and sugar until light and fluffy. Add eggs one at a time, then stir in vanilla.
  3. In a separate bowl, combine flour, baking powder, and salt.
  4. Gradually add dry ingredients to wet, alternating with milk. Mix just until combined.
  5. Fold in crushed pineapple.
  6. Pour batter into pan and bake 30–35 minutes, or until a toothpick comes out clean.
  7. While warm, poke holes over the cake and pour pineapple juice and sweetened condensed milk evenly over the top.
  8. Chill for 1 hour. Top with whipped cream, pineapple chunks, and mint leaves if desired.
