Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 1 cup red wine
  • 3 carrots, sliced
  • 2 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Season the beef cubes with salt and pepper, then brown them in batches.
  3. Remove the beef and set aside. In the same pot, add onions and garlic, sauté until softened.
  4. Add tomato paste, stirring for a minute, then pour in red wine to deglaze the pot.
  5. Return the beef to the pot, add beef broth, carrots, potatoes, thyme, and bay leaf.
  6. Bring to a boil, then reduce heat to low and cover. Simmer for 2-3 hours until the beef is tender.
  7. Adjust seasoning with salt and pepper before serving.

  • For a thicker stew, you can add a cornstarch slurry towards the end of cooking.
