  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 1 cup cooked quinoa
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon maple syrup
  • 1 tablespoon lime juice
  • 1 teaspoon garlic, minced
  • 1/4 cup chopped peanuts (for garnish)
  • Fresh cilantro (for garnish)

Instructions

  1. Press the tofu to remove excess moisture, then cut it into cubes.
  2. In a skillet, heat vegetable oil over medium heat and add the tofu cubes. Cook until golden brown on all sides.
  3. Add broccoli, bell pepper, and carrot to the skillet and stir-fry for about 5 minutes until vegetables are tender.
  4. In a bowl, whisk together peanut butter, soy sauce, maple syrup, lime juice, and minced garlic to create the sauce.
  5. Pour the peanut sauce over the tofu and vegetables, stirring to coat evenly.
  6. Serve the tofu and vegetable mixture over cooked quinoa.
  7. Garnish with chopped peanuts and fresh cilantro before serving.
