Ingredients

  • 2 cups cooked brown rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 4 large eggs
  • 1 avocado, diced
  • 1 cup salsa
  • 1/2 cup shredded cheese (cheddar or Mexican blend)

Instructions
