2 cups corn masa
1 cup sweet corn kernels (for Elote tamales)
1 cup cooked and shredded pork (for Pork tamales)
1/2 cup vegetable broth
1/4 cup vegetable oil
1 tsp baking powder
1 tsp salt
20–25 corn husks (soaked in warm water)
Instructions
Prepare the corn husks by soaking them in warm water for at least 30 minutes.
In a mixing bowl, combine corn masa, baking powder, salt, vegetable oil, and vegetable broth until smooth.
If making Elote tamales, fold in the sweet corn kernels into the masa mixture.
If making Pork tamales, fold in the shredded pork into the masa mixture.
Take a soaked corn husk, spread a portion of the masa mixture on it, add a spoonful of filling, and fold the husk to enclose the filling.
Repeat until all masa and filling are used.
Place the tamales upright in a steamer pot and steam for about 1-1.5 hours, or until the masa pulls away from the husk easily.
Let them cool slightly before serving.
Notes
Ensure the corn husks are pliable for easy wrapping.
Adjust the filling according to personal preference.
