Ingredients

  • 2 medium sweet potatoes, cubed
  • 1 cup quinoa, rinsed
  • 1 can chickpeas, drained and rinsed
  • 1 avocado, sliced
  • 2 cups spinach
  • 1 red bell pepper, diced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh lemon juice for dressing

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the cubed sweet potatoes with olive oil, paprika, salt, and pepper. Spread them on a baking sheet.
  3. Roast the sweet potatoes in the oven for 25-30 minutes until tender.
  4. While the sweet potatoes are roasting, cook the quinoa according to package instructions.
  5. In a large bowl, combine the cooked quinoa, roasted sweet potatoes, chickpeas, spinach, and diced red bell pepper.
  6. Top with sliced avocado and drizzle with fresh lemon juice before serving.
