  • 4 medium zucchinis
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the insides to create boats.
  3. In a skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned.
  4. Add the diced tomatoes, cooked rice, Italian seasoning, salt, and pepper to the skillet. Mix well.
  5. Stuff the zucchini halves with the beef mixture.
  6. If desired, sprinkle shredded cheese on top of the stuffed zucchinis.
  7. Place the stuffed zucchinis in a baking dish and cover with foil.
  8. Bake for 25-30 minutes, then remove the foil and bake for an additional 10 minutes until the zucchinis are tender.
