Ingredients

  • ¼ cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • ¾ cup sour cream
  • 1 teaspoon vanilla extract
  • 3 large eggs, room temperature
  • 1 ½ cups fresh strawberries, hulled and chopped
  • ¼ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 15 Golden Oreos or vanilla sandwich cookies
  • ½ cup freeze dried strawberries
  • 4 tablespoons unsalted butter, melted

Instructions

  1. Preheat oven to 325°F (160°C). Line a 9-inch springform pan with parchment paper and lightly grease the sides.
  2. Make the Crust: Combine graham cracker crumbs, sugar, and melted butter. Press firmly into the bottom of the pan. Bake for 10 minutes, then cool.
  3. Prepare the Filling: Beat softened cream cheese until smooth. Add sugar, sour cream, and vanilla; mix well. Add eggs one at a time, mixing on low just until combined.
  4. Pour the filling over the crust and smooth the top.
  5. Bake for 50–60 minutes, until the center jiggles slightly.
  6. Cool Gradually: Turn off the oven and leave the cheesecake inside with the door cracked for 30 minutes. Remove and cool at room temperature for 1 hour. Then chill in the fridge for at least 4 hours or overnight.
  7. Make the Strawberry Topping: In a saucepan, combine strawberries, sugar, and lemon juice. Cook over medium heat until berries soften. Stir in the cornstarch slurry and simmer until thickened. Let cool completely.
  8. Make the Crunch Topping: Pulse Golden Oreos and freeze-dried strawberries in a food processor until crumbly. Mix with melted butter until combined.
  9. Assemble: Spoon the cooled strawberry topping over the chilled cheesecake, then sprinkle generously with the crunch topping.
  10. Slice and serve—every bite is pure strawberry bliss!
