Ingredients

  • 8 large eggs
  • 1 cup fresh spinach, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup milk
  • 1/2 cup shredded cheese (optional)
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, whisk together the eggs and milk until well combined.
  3. Add the chopped spinach, halved cherry tomatoes, salt, and pepper to the egg mixture.
  4. Grease a sheet pan with olive oil.
  5. Pour the egg mixture onto the prepared sheet pan and spread it evenly.
  6. If using, sprinkle shredded cheese on top.
  7. Bake in the preheated oven for 20-25 minutes, or until the frittata is set and lightly golden.
  8. Remove from the oven, let cool slightly, then slice and serve.
