4 cups chicken or vegetable broth
2 tablespoons miso paste
1 tablespoon soy sauce
1 tablespoon sesame oil
2 teaspoons chili paste
2 servings ramen noodles
2 soft-boiled eggs
1 cup sliced green onions
1 cup bean sprouts
1 sheet nori, cut into strips
Instructions
In a large pot, heat the sesame oil over medium heat.
Add the broth, miso paste, soy sauce, and chili paste. Stir until the miso is fully dissolved.
Bring the mixture to a simmer and let it cook for about 10 minutes.
Meanwhile, cook the ramen noodles according to package instructions.
Once the noodles are cooked, drain and divide them into bowls.
Pour the hot miso broth over the noodles.
Top each bowl with sliced green onions, bean sprouts, and a soft-boiled egg cut in half.
Garnish with nori strips and serve immediately.
Notes
For a spicier version, add more chili paste to taste.
Soft-boiled eggs can be made by boiling them for 6-7 minutes and then placing them in ice water.
Feel free to add other toppings like corn, mushrooms, or bok choy.
