Ingredients

  • 2 cups sourdough starter
  • 4 cups all-purpose flour
  • 1 1/2 cups water
  • 1/4 cup olive oil
  • 1 tablespoon salt
  • 1 tablespoon sugar
  • 1 cup fresh blueberries
  • Zest of 1 lemon
  • Juice of 1 lemon

Instructions

  1. In a large bowl, combine the sourdough starter, water, and olive oil.
  2. Add the flour, salt, and sugar, and mix until a dough forms.
  3. Knead the dough for about 10 minutes until smooth and elastic.
  4. Incorporate the blueberries, lemon zest, and lemon juice into the dough.
  5. Cover the bowl with a damp cloth and let it rise for 4-6 hours, or until doubled in size.
  6. Preheat the oven to 425°F (220°C).
  7. Transfer the dough to a greased baking sheet and stretch it out to fit the pan.
  8. Let it rest for another 30 minutes, then dimple the surface with your fingers.
  9. Drizzle with olive oil and sprinkle with sea salt.
  10. Bake for 25-30 minutes or until golden brown.
  11. Allow to cool slightly before slicing and serving.
