  • 1/2 cup protein powder
  • 1/2 cup sugar
  • 1/2 cup unsweetened applesauce
  • 1/2 cup milk (or non-dairy alternative)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp cinnamon
  • 1/4 cup sugar (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the whole wheat flour, protein powder, sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, whisk together the applesauce, milk, eggs, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients and stir until just combined.
  5. Fill each muffin cup about 2/3 full with the batter.
  6. In a small bowl, mix the remaining sugar and cinnamon for the topping, then sprinkle it over the muffins.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool for a few minutes before transferring to a wire rack to cool completely.
