Ingredients

Scale
  • 2 cups dried white beans
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 cups kale, chopped

Instructions

  1. Rinse and soak the dried white beans overnight.
  2. In the slow cooker, combine the soaked beans, onion, carrots, celery, garlic, vegetable broth, thyme, bay leaf, salt, and pepper.
  3. Cover and cook on low for 8 hours or high for 4 hours.
  4. About 30 minutes before serving, stir in the chopped kale.
  5. Remove the bay leaf before serving and adjust seasoning as needed.

Notes

  • For a creamier texture, blend a portion of the soup before adding the kale.
  • This soup can be stored in the refrigerator for up to 5 days.
  • Freezes well for up to 3 months.
