  • 4 large banana peppers
  • 1 cup cream cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 4 cups chicken broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the banana peppers and remove the seeds.
  3. In a bowl, mix cream cheese, cheddar cheese, Parmesan cheese, garlic, Italian seasoning, salt, and pepper.
  4. Stuff the banana peppers with the cheese mixture.
  5. Place the stuffed peppers in a baking dish and bake for 20 minutes.
  6. In a large pot, sauté the diced onion until translucent.
  7. Add the chicken broth and bring to a simmer.
  8. Once the peppers are done baking, chop them and add to the soup.
  9. Simmer for an additional 10 minutes.
  10. Serve hot, garnished with fresh parsley.
