2 cups cooked shredded chicken
1 cup salsa verde
1 cup sour cream
2 cups shredded cheese (cheddar or Monterey Jack)
1 can black beans, drained and rinsed
1 cup corn (frozen or canned)
1 teaspoon cumin
1 teaspoon garlic powder
Salt and pepper to taste
1 package tortilla chips (optional for topping)
Instructions
Preheat the oven to 350°F (175°C).
In a large mixing bowl, combine the shredded chicken, salsa verde, sour cream, black beans, corn, cumin, garlic powder, salt, and pepper.
Spread half of the mixture in a greased 9×13 inch baking dish.
Sprinkle half of the shredded cheese over the mixture.
Layer the remaining chicken mixture on top, followed by the rest of the cheese.
If desired, crush tortilla chips and sprinkle them on top for added crunch.
Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
Let it cool for a few minutes before serving.
