Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, mix together flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, combine pumpkin puree, vegetable oil, and eggs until smooth.
  4. Gradually add the wet ingredients to the dry ingredients and mix until just combined.
  5. In a separate bowl, mix brown sugar, oats, and cold butter until crumbly to make the streusel topping.
  6. Pour the pumpkin batter into the prepared pan and sprinkle the streusel topping evenly over the batter.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  8. While the cake is baking, prepare the creamy glaze by mixing powdered sugar and milk until smooth.
  9. Once the cake is done, let it cool for a few minutes before drizzling the glaze on top.
