  • 1 1/2 cups all-purpose flour
  • 1 cup pumpkin puree
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, spices, and salt.
  3. In another bowl, mix the pumpkin puree, sugars, oil, eggs, and vanilla until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. If using, fold in the chopped nuts.
  6. In a small bowl, mix together the streusel ingredients: 1/2 cup brown sugar, 1/4 cup flour, and 2 tablespoons butter until crumbly.
  7. Fill the muffin cups about 2/3 full with batter and sprinkle the streusel on top.
  8. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  9. Let cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Store muffins in an airtight container for up to 3 days.
  • These muffins freeze well; wrap individually and store in the freezer.
  • For a healthier option, substitute half of the oil with applesauce.
