Instructions
Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
In a large bowl, mix together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
In another bowl, whisk together the pumpkin puree, vegetable oil, and eggs until well combined.
Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
Fill the cupcake liners about 2/3 full with the batter.
Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
Let the cupcakes cool completely before frosting.
For the frosting, beat together the cream cheese and butter until smooth, then gradually add the powdered sugar and vanilla extract until well combined.
Frost the cooled cupcakes with the cream cheese frosting.
