Ingredients

Scale
  • 2 pounds flat iron steak, skirt steak, sirloin, or ribeye, sliced into 1/4 inch strips
  • Salt, to taste
  • Black pepper, to taste
  • Granulated garlic, to taste
  • 2 green bell peppers, chopped
  • 1 yellow bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 white onion, diced
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 1 tablespoon oyster sauce
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon garlic paste
  • 1 tablespoon ginger paste
  • 1 tablespoon red pepper flakes
  • 2 tablespoons water (optional)
  • Large flour tortillas
  • Mexican melting cheese, shredded
  • Chipotle mayonnaise or sour cream
  • Avocado oil, for griddle

Instructions

  1. Season the sliced steak with salt, black pepper, and granulated garlic.
  2. In a large skillet, heat avocado oil over medium-high heat and add the seasoned steak. Cook until browned and cooked through.
  3. Add the chopped bell peppers and diced onion to the skillet and sauté until the vegetables are tender.
  4. In a bowl, mix together the soy sauce, brown sugar, oyster sauce, rice wine vinegar, sesame oil, garlic paste, ginger paste, red pepper flakes, and water (if using).
  5. Pour the sauce over the steak and vegetables, stirring to combine. Cook for an additional 2-3 minutes until the sauce thickens slightly.
  6. Remove the mixture from heat and set aside.
  7. On a griddle, place a large flour tortilla and sprinkle a generous amount of shredded cheese on one half.
  8. Add a portion of the steak and vegetable mixture on top of the cheese, then fold the tortilla over.
  9. Cook until the tortilla is golden brown and the cheese is melted, flipping once.
  10. Repeat with remaining tortillas and filling.
  11. Serve with chipotle mayonnaise or sour cream on the side.

Notes

  • Feel free to adjust the spice level by adding more or less red pepper flakes.
  • For a vegetarian option, substitute the steak with grilled mushrooms or tofu.
  • These quesadillas can be made ahead of time and reheated in the oven.
