Ingredients

  • 1 cup ditalini pasta
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 4 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion, garlic, carrots, and celery. Sauté until the vegetables are tender.
  2. Add the diced tomatoes, vegetable broth, cannellini beans, oregano, basil, salt, and pepper. Bring to a boil.
  3. Once boiling, add the ditalini pasta and cook according to package instructions until al dente.
  4. Adjust seasoning if necessary and serve hot, garnished with fresh herbs or grated cheese if desired.
