Ingredients

  • 1 lb beef stew meat, cut into cubes
  • 4 cups beef broth
  • 2 cups water
  • 1 cup carrots, sliced
  • 1 cup potatoes, diced
  • 1 cup green beans, chopped
  • 1 cup corn, frozen or fresh
  • 1 cup peas, frozen or fresh
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 bay leaf

Instructions

  1. In a large pot, brown the beef stew meat over medium heat.
  2. Add the chopped onion and minced garlic, cooking until the onion is translucent.
  3. Pour in the beef broth and water, bringing the mixture to a boil.
  4. Add the carrots, potatoes, green beans, corn, and peas to the pot.
  5. Season with salt, pepper, thyme, and add the bay leaf.
  6. Reduce heat and let the soup simmer for about 1.5 to 2 hours, or until the beef is tender.
  7. Remove the bay leaf before serving. Enjoy hot!

Notes

  • This soup can be made in a slow cooker for added convenience.
  • Feel free to add any other vegetables you have on hand.
