Ingredients

  • 4 cups corn kernels (fresh or frozen)
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1 cup cotija cheese, crumbled
  • 1/2 cup cilantro, chopped
  • 1/4 cup lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup crushed tortilla chips (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine corn, sour cream, mayonnaise, cotija cheese, cilantro, lime juice, chili powder, garlic powder, salt, and pepper.
  3. Mix until well combined.
  4. Transfer the mixture to a greased baking dish.
  5. Top with crushed tortilla chips.
  6. Bake for 25-30 minutes or until bubbly and golden on top.
  7. Let it cool for a few minutes before serving.
