Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 medium zucchinis, spiralized into zoodles
  • 4 cloves garlic, minced
  • 1/4 cup chicken broth
  • 1/4 cup white wine (optional)
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add shrimp to the skillet and cook until pink, about 2-3 minutes per side.
  4. Pour in chicken broth and white wine, and bring to a simmer.
  5. Add zoodles and lemon juice, tossing to combine.
  6. Cook for an additional 2-3 minutes until zoodles are tender.
  7. Season with salt and pepper to taste.
  8. Garnish with fresh parsley before serving.

Notes

  • For a spicier version, add red pepper flakes.
  • Make sure not to overcook the zoodles to keep them crunchy.
  • This dish can be served with grated Parmesan cheese on top for extra flavor.
