Ingredients

  • 4 large potatoes
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • 1 cup sour cream
  • 1 cup salsa
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • Chopped green onions for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork, then bake for 45-60 minutes until tender.
  3. In a skillet, cook the ground beef or turkey over medium heat until browned.
  4. Add the taco seasoning and follow package instructions.
  5. Once the potatoes are done, let them cool slightly, then cut them in half and scoop out some of the insides.
  6. Mix the scooped potato with the cooked meat, black beans, corn, and half of the cheese.
  7. Fill the potato skins with the mixture and top with the remaining cheese.
  8. Bake for an additional 10-15 minutes until the cheese is melted.
  9. Serve with sour cream, salsa, and garnish with green onions.
