Ingredients

  • 4 large russet potatoes, peeled and diced
  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 4 cups chicken broth
  • 2 cups milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt butter over medium heat.
  2. Add flour and whisk until smooth, cooking for about 1 minute.
  3. Gradually add chicken broth, whisking continuously until thickened.
  4. Add diced potatoes and bring to a boil. Reduce heat and simmer until potatoes are tender.
  5. Stir in milk and cheese until melted and creamy.

Notes

  • For a vegetarian version, use vegetable broth and omit bacon.
