  • 2 large eggs
  • 1 1/2 cups milk
  • 1 tablespoon melted butter
  • 1/4 cup ricotta cheese
  • 1/4 cup powdered sugar
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • Butter for cooking

Instructions

  1. In a mixing bowl, whisk together flour, eggs, milk, and melted butter until smooth.
  2. Heat a non-stick skillet over medium heat and add a small amount of butter.
  3. Pour a ladleful of batter into the skillet, swirling to coat the bottom evenly.
  4. Cook for 1-2 minutes until the edges start to lift, then flip and cook for another minute.
  5. In a separate bowl, mix ricotta cheese, powdered sugar, lemon zest, lemon juice, and vanilla extract until well combined.
  6. Place a spoonful of the ricotta mixture onto one half of each crepe.
  7. Fold the crepe over the filling and cook for an additional minute.
  8. Serve warm, dusted with powdered sugar and additional lemon zest if desired.

  • For a richer flavor, use whole milk instead of low-fat milk.
