  • 1 1/2 cups sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup crushed pineapple, drained
  • 1 cup mashed bananas (about 2 bananas)
  • 1 cup sliced strawberries
  • 1/2 cup chopped pecans

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract.
  5. In another bowl, combine the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the milk.
  7. Fold in the crushed pineapple, mashed bananas, and chopped pecans.
  8. Divide the batter evenly between three greased and floured cake pans.
  9. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  10. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  11. Once cooled, layer the cakes with sliced strawberries in between and on top.
  12. Garnish with additional pecans if desired.

  • For added flavor, consider using coconut milk instead of regular milk.
