Ingredients

  • 1 1/2 cups graham cracker crumbs (about 12 full sheets, crushed)
  • 1/3 cup granulated sugar
  • 6 Tablespoons butter, melted
  • 2 14 ounce cans sweetened condensed milk
  • 4 ounces cream cheese, softened
  • 3/4 cup Key lime juice
  • zest of 2 regular limes, or 4 key limes
  • fresh whipped cream, for topping (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
  3. Press the mixture into the bottom of a greased 9×9 inch baking dish to form the crust.
  4. Bake the crust for 8-10 minutes or until lightly golden. Remove from the oven and let cool.
  5. In a large bowl, whisk together the sweetened condensed milk, cream cheese, key lime juice, and lime zest until smooth.
  6. Pour the key lime filling over the cooled crust and spread evenly.
  7. Bake for an additional 15-20 minutes, or until the filling is set but still slightly jiggly in the center.
  8. Let the bars cool to room temperature, then refrigerate for at least 2 hours before serving.
  9. Top with fresh whipped cream before serving, if desired.

Notes

  • For a more intense lime flavor, use fresh key limes if available.
  • These bars can be made a day in advance and stored in the refrigerator.
  • Cut into squares for easy serving.
