Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together pumpkin puree, sugar, brown sugar, vegetable oil, eggs, and vanilla extract until well combined.
  3. In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  4. Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
  5. In a separate bowl, combine oats, chopped nuts, and a bit of sugar for the streusel topping.
  6. Pour the pumpkin batter into a greased baking dish and sprinkle the streusel topping evenly over the top.
