Ingredients

  • 1 whole chicken (about 34 lbs)
  • 4 cups of water
  • 2 large carrots, sliced
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 bay leaf
  • 1 tablespoon of fresh parsley, chopped

Instructions

  1. In a large pot, place the whole chicken and cover it with water.
  2. Add the chopped onion, celery, garlic, salt, pepper, and bay leaf.
  3. Bring to a boil, then reduce heat and simmer for about 1 hour.
  4. Remove the chicken from the pot and let it cool.
  5. Add the sliced carrots to the pot and continue to simmer for another 20 minutes.
  6. While the carrots are cooking, shred the chicken into bite-sized pieces, discarding the skin and bones.
  7. Return the shredded chicken to the pot and stir in the fresh parsley.
  8. Adjust seasoning if necessary and serve hot.

  • For a richer flavor, you can roast the chicken before adding it to the pot.
