Ingredients

  • 1 cup lentils
  • 2 carrots, diced
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat olive oil over medium heat.
  3. Add the onion, garlic, carrots, celery, and bell pepper. Sauté until the vegetables are softened.
  4. Stir in the cumin and paprika, cooking for an additional minute.
  5. Add the lentils, vegetable broth, and diced tomatoes to the pot.
  6. Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until lentils are tender.
  7. Season with salt and pepper to taste before serving.

Notes

  • Feel free to add any other vegetables you have on hand.
