1 lb ground turkey or lean beef
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) diced tomatoes
1 cup chopped bell peppers
1 cup chopped onions
2 cloves garlic, minced
2 tbsp chili powder
1 tsp cumin
1 tsp paprika
Salt and pepper to taste
1 cup low-sodium chicken or vegetable broth
Instructions
In a skillet, brown the ground turkey or beef over medium heat, then drain excess fat.
Transfer the browned meat to the slow cooker.
Add the black beans, kidney beans, diced tomatoes, bell peppers, onions, garlic, chili powder, cumin, paprika, salt, pepper, and broth to the slow cooker.
Stir all ingredients until well combined.
Cover and cook on low for 6-8 hours or on high for 3-4 hours.
Serve hot, garnished with your favorite toppings.
Notes
Feel free to add more vegetables like zucchini or corn for extra nutrition.
This chili can be made ahead of time and stored in the refrigerator for up to 3 days.
