Ingredients

  • 8 oz pasta of choice
  • 1 block (8 oz) feta cheese
  • 2 cups cherry tomatoes
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 2 cups spinach
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a baking dish, combine cherry tomatoes, zucchini, bell pepper, and garlic.
  3. Place the block of feta cheese in the center of the vegetables.
  4. Drizzle olive oil over the vegetables and feta, then season with salt and pepper.
  5. Bake in the preheated oven for 30 minutes, until the feta is soft and the vegetables are roasted.
  6. Meanwhile, cook the pasta according to package instructions.
  7. Once the feta and vegetables are done, remove from the oven and mix everything together.
  8. Add the cooked pasta and spinach, stirring until the spinach wilts.
  9. Serve warm, garnished with fresh basil.
