  • 2 medium zucchinis (about 2 lbs), sliced into 1/2″ rounds
  • 1 tbsp olive oil
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 1 lb lean ground beef
  • 2 tsp Italian seasoning
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 (28 oz) can diced tomatoes, drained
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent.
  3. Add the ground beef to the skillet, cooking until browned. Drain any excess fat.
  4. Stir in the Italian seasoning, kosher salt, and black pepper. Mix well.
  5. Add the drained diced tomatoes and stir to combine.
  6. In a greased casserole dish, layer half of the zucchini rounds on the bottom.
  7. Spread half of the beef mixture over the zucchini, then sprinkle with 1 cup of mozzarella cheese.
  8. Repeat the layers with the remaining zucchini, beef mixture, and top with the remaining mozzarella cheese.
  9. Cover the casserole with aluminum foil and bake for 25 minutes.
  10. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
  11. Let it cool for a few minutes before serving.

  • Feel free to add other vegetables like bell peppers or mushrooms for extra flavor.
  • This casserole can be made ahead of time and stored in the refrigerator before baking.
