Ingredients

Scale
  • 1 lb flank steak
  • 1/4 cup balsamic vinegar
  • 2 cups corn (fresh or frozen)
  • 1/2 cup gorgonzola cheese, crumbled
  • 4 cups mixed greens
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Marinate the flank steak in balsamic vinegar for at least 30 minutes.
  2. Preheat the grill to medium-high heat.
  3. Grill the steak for about 5-7 minutes on each side, or until desired doneness.
  4. Remove the steak from the grill and let it rest for 5 minutes before slicing.
  5. In a large bowl, combine mixed greens, corn, and gorgonzola cheese.
  6. Slice the grilled steak and add it to the salad.
  7. Drizzle with olive oil and season with salt and pepper before serving.

Notes

  • For a spicier kick, add sliced jalapeños to the salad.
  • Can substitute flank steak with sirloin or ribeye.
  • Use fresh corn for the best flavor, but frozen corn works well too.
