Ingredients

  • 1 lb chicken breast, diced
  • 1 cup wild rice
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 cup coconut milk
  • 2 cloves garlic, minced
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté onions, carrots, and celery until softened.
  2. Add garlic and cook for an additional minute.
  3. Stir in the diced chicken and cook until no longer pink.
  4. Add the wild rice, chicken broth, thyme, and rosemary. Bring to a boil.
  5. Reduce heat and simmer for 45 minutes or until the rice is tender.
  6. Stir in the coconut milk and season with salt and pepper.
