2 cups cooked chicken, shredded
1 cup uncooked brown rice
3 cups chicken broth
1 cup broccoli florets
1 cup shredded cheddar cheese
1/2 cup diced onion
1/2 cup diced bell pepper
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
Instructions
Preheat the oven to 350°F (175°C).
In a large mixing bowl, combine the cooked chicken, uncooked brown rice, chicken broth, broccoli, half of the cheddar cheese, onion, bell pepper, garlic powder, onion powder, salt, and pepper.
Pour the mixture into a greased 9×13 inch baking dish.
Cover the dish with aluminum foil and bake for 45 minutes.
Remove the foil, stir the casserole, and sprinkle the remaining cheddar cheese on top.
Bake uncovered for an additional 15 minutes, or until the cheese is melted and bubbly.
Let it cool for a few minutes before serving.

For added flavor, consider adding herbs like thyme or rosemary.
