Ingredients

  • 1 lb steak (sirloin or ribeye)
  • 1 lb baby potatoes, halved
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon fresh thyme, chopped
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Add the halved baby potatoes and season with salt and pepper. Cook until golden brown and tender, about 15-20 minutes.
  3. Remove the potatoes from the skillet and set aside.
  4. In the same skillet, add the steak and sear on both sides until desired doneness is reached, about 4-5 minutes per side for medium-rare.
  5. Reduce heat to low and add the butter, garlic, rosemary, and thyme to the skillet.
  6. Once the butter is melted, spoon the garlic butter over the steak for flavor.
  7. Add the cooked potatoes back to the skillet and toss to combine.
  8. Serve hot, garnished with additional herbs if desired.
