  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 4 cups beef broth
  • 1 cup red wine
  • 2 bay leaves
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the beef cubes and brown on all sides.
  3. Remove the beef and set aside. In the same pot, add onion, carrots, and celery; sauté until softened.
  4. Add garlic and tomato paste, cooking for an additional minute.
  5. Return the beef to the pot and pour in the beef broth and red wine.
  6. Add bay leaves, thyme, salt, and pepper. Bring to a boil.
  7. Reduce heat to low, cover, and simmer for 2-3 hours until the beef is tender.
  8. Remove bay leaves before serving and garnish with fresh parsley.

Notes

  • For a thicker stew, you can add a slurry of cornstarch and water.
  • Serve with crusty bread or over mashed potatoes for a complete meal.
  • This stew can be made a day in advance for better flavor.
