  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 cup canned pumpkin puree
  • 1 tsp vanilla extract
  • ½ cup chopped nuts (optional)
  • ½ cup rolled oats (for crumb topping)
  • ¼ cup brown sugar (for crumb topping)
  • ¼ cup all-purpose flour (for crumb topping)
  • 2 tbsp melted butter (for crumb topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, mix the granulated sugar, brown sugar, and vegetable oil until well combined.
  4. Add the eggs, pumpkin puree, and vanilla extract to the sugar mixture and mix until smooth.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. If using, fold in the chopped nuts.
  7. Pour the batter into the prepared loaf pan.
  8. In a separate bowl, combine the rolled oats, brown sugar, flour, and melted butter to make the crumb topping.
  9. Sprinkle the crumb topping evenly over the batter in the loaf pan.
  10. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  11. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
