Ingredients

  • 1 cup of oats
  • 1 scoop of protein powder
  • 1/2 cup of Greek yogurt
  • 1/2 cup of almond milk
  • 1/4 cup of honey or maple syrup
  • 2 eggs
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon of vanilla extract
  • 1/2 cup of mixed berries (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the oats, protein powder, baking powder, and baking soda.
  3. In another bowl, whisk together the Greek yogurt, almond milk, honey (or maple syrup), eggs, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients and stir until just mixed.
  5. If using, fold in the mixed berries gently.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool for a few minutes before transferring them to a wire rack.
