  • 2 medium spaghetti squash
  • 1 cup cooked quinoa
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or fresh
  • 1 red bell pepper, diced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Place the squash halves cut-side down on a baking sheet and roast for 30-40 minutes until tender.
  4. In a large bowl, combine cooked quinoa, black beans, corn, diced bell pepper, cumin, chili powder, salt, and pepper.
  5. Once the squash is cooked, use a fork to scrape the flesh into strands and mix it with the filling.
  6. Stuff the squash halves with the filling mixture and top with cheese if desired.
  7. Return to the oven and bake for an additional 10-15 minutes until heated through and cheese is melted.
  8. Garnish with fresh cilantro before serving.
