12 corn tortillas
2 cups black beans (cooked and mashed)
1 cup vegetable broth
1/2 cup onion (finely chopped)
1 cup cheese (crumbled, such as queso fresco)
1/2 cup sour cream
Salt to taste
Fresh cilantro for garnish
Instructions
In a blender, combine the black beans and vegetable broth until smooth.
In a skillet, heat the black bean sauce over medium heat, adding salt to taste.
In another skillet, lightly fry the corn tortillas until soft.
Dip each tortilla into the black bean sauce, coating both sides.
Place the coated tortilla on a plate and fill with cheese and onions.
Fold the tortilla in half and top with more black bean sauce, cheese, and sour cream.
Garnish with fresh cilantro before serving.
Notes
For a spicier version, add jalapeños to the black bean sauce.
Can be served with avocado slices for added creaminess.
Leftover black bean sauce can be stored in the refrigerator for up to 3 days.
