Ingredients

  • 4 ears of corn
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup cotija cheese, crumbled
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  1. Preheat the grill to medium-high heat.
  2. Carefully cut the corn into quarters lengthwise to create corn ribs.
  3. In a bowl, mix olive oil, chili powder, smoked paprika, garlic powder, salt, and black pepper.
  4. Brush the corn ribs with the spice mixture.
  5. Place the corn ribs on the grill and cook for about 10-12 minutes, turning occasionally until charred and tender.
  6. Remove from the grill and sprinkle with cotija cheese and cilantro.
  7. Serve with lime wedges on the side.

Notes

  • For a spicier version, add cayenne pepper to the spice mix.
  • These can also be baked in the oven at 400°F for 20-25 minutes if a grill is not available.
  • Feel free to substitute feta cheese for cotija if desired.
